My birthday ice cream was homemade. And perfect.
2 tablespoons Peppermint Schnapps
2 teaspoons vanilla
2 cups milk
1 3/4 cups sugar
1/2 teaspoon salt
2 cups half and half
4 cups cream
2 cups minced chocolate
Heat pan and cook down Schnapps and Vanilla until they are slightly thickened (not long). Pour in milk, whisking quickly. When bubbles form on the sides of the pan and the milk is steaming slightly, turn off the burner. Whisk in sugar.
Add salt, half & half and cream.
Stir thoroughly.
Pour into ice cream maker. (We use the old fashioned salt and ice variety.)
When the mixing is nearly done, add in the chocolate.
You can put the whole mixture in the freezer to set, but we were impatient and didn't. This would also rock with homemade chocolate sauce, which is:
1 tablespoon butter
1/4 cup cream
1 bar baker's chocolate (whichever you prefer)
1/4 teaspoon nutmeg
1 pinch chili powder
Heat butter and cream until slightly bubbly, pour in chocolate and remove from heat. Stir until smooth. Sprinkle with nutmeg and chili powder, and enjoy!
Trust me. The enjoying part is EASY.
I made this the other day to put in my homemade version of hot pockets. Trust me when I say it is INCREDIBLY good, insanely cheap- and easy to prepare!
INGREDIENTS:
One tablespoon butter
Two cloves of chopped garlic
One teaspoon flour
One quarter cup celery, finely cut
One teaspoon Worcestershire sauce (or a few dashes)
One teaspoon basil
Two cans of packed tuna, drained
Two tablespoons of Mayonnaise
One half to one cup sharp cheddar cheese, grated
One quarter cup grated parmesan
Salt and pepper to taste.
Set all your ingredients off to the side, already measured. This will go pretty quickly.
Melt your butter in a skillet over medium high heat. Add in the garlic and swish it around the pan- be careful not to burn it. Add the flour and stir until it looks slightly opaque (not long). Add in the celery, Worcestershire sauce, basil, and tuna. Stir until heated through. Add the mayonnaise and cheeses. Stir until they melt. Salt and pepper to taste.
The whole process only takes a few minutes. You can serve it on toast or crackers as an appetizer, grilled into a hot sandwich, or with cheese sauce on pasta. For an added tough of flavor, it could be topped with crushed olives, salsa, green onions, or even crumbled egg.
FOR THE CALORIE CONSCIOUS:
Instead of using fresh garlic, use prepared minced garlic or garlic powder. Omit the butter and flour, and use fat free sour cream instead of the mayonnaise, and use a lighter cheese of your choice instead of cheddar. It is still good.
FOR PARENTS: the strong flavors mask the fishy taste enough that picky young mouths won't realize they are eating tuna. If your children's taste buds are highly tuned, substitute a heaping cup of shredded chicken for the tuna. Also delicious.
